Well hello there strangers! Sorry for going totally MIA for a couple of days. You know what happens; school, people and dogs take over your life;) Today was my dads birthday and he requested some pretty delicious eats including my all time favourite cheesecake that will make cheesecake haters love it. Don’t worry the recipe is coming.
This morning began with a typical bowl of steel cut oats, apple juice, water, fruit, almonds and a little scoop of White Chocolate Wonderful PB.
This pic was taken pre PB. I have this weird thing where I have to mix the fruit and oats together before adding the PB and it doesn’t look as appetizing;) I feel the need to also tell you that that cup contains coffee (not that you already didn’t guess;)
After breakfast me and the pup went on a 8 mile run with a 7:50 pace. It was such a gorgeous trail I had to stop and take a photo..
I promise you if you come and visit me I will take you on all the wonderful trails of the west coast. Running is optional but highly recommended
After my run I headed to the grocery store to pick up a few ingredients for my Dad’s requested lunch of Chicken and Veggie Pitas.
I bought one of those already cooked rotisserie chickens and a bunch of veggies. I cute the pitas in half and made up some Epicure Tzatiki. My pita jalf was filled to the brim with lots of veggies (cucumbers, onions, peppers, lettuce, tomato) chicken and plenty of tzatiki!
As the day went on we gave the pops tons of gifts.. Mine was my own Pinterest worthy creation!! (Ok so maybe my Grandpa helped me a little bit.. )
We made the base and than filled a jar with M&M’s (My dads favourite). Then we screwed on the jar and when you pull the handles an M&M comes out! You could probably fill this with Skittles, Smarties, Peanut Butter M&M’s, Jelly Beans etc. The possibilities are endless! My dad LOVED this and even let us all sample a few
Dinner was courtesy of Mi Madre and it was a winner. All the family raved about it..
Halibut, salad and brown rice. The halibut was made using a can of cream of mushroom soup, laughing cow and sprinkled with bread crumbs before baking in a casserole dish. It was so good except for the part where I made a mistake and ate a mushroom. The only thing that could help me recover from such a traumitizing event was this beauty..
Hello Chocolate Mocha Cheesecake. Come to mama. This recipe has been in the family since my mom was 12! It is definitely a winner!
Chocolate Mocha Cheesecake
1 1/4 cup oreo crumbs
1/4 cup sugar
1/4 cup butter melted
8oz cream cheese softened
14 oz sweetened condensed milk
1 cup whipping cream whipped
2/3 cup chocolate syrup
3 tbsp instant coffee
2 tbsp hot water
1. Combine butter, sugar and crumbs.
2. Pat the mixture on a 9inch springform pan and freeze.
3. Combine cream cheese, condensed milk and chocolate syrup in the food processor and blend.
4. Dissolve the instant coffee in hot water and add to the food processor blending again.
5. Fold in whipped cream.
6. Pour mixture into the chocolate crust and cover with tin foil.
7. Freeze for 6 hours.
Eat and enjoy
